Christmas Baking

I personally LOVE to bake! As a wedding gift, my Aunt & Uncle from Montreal gave me the KitchenAid Stand Mixer. I usually only get to pull it out and actually use it during the holidays, so when it does get used, butterflies develop in my tummy out of pure excitement! (It's the little things in life, eh?!)
For Thanksgiving, I made a pumpkin swirl cheesecake.  Let's 1st talk about the oopsy that happened after making this... it was around 11 p.m. when the cheesecake got finished baking, so I took it out of the oven & let it sit for a few before sticking it in the fridge... except I went straight upstairs after taking it out of the oven, so it sat on my stove OVERNIGHT!! Big 'ol Oopsy! Thanksgiving morning we wake up to realize the mistake & I knew if I didn't want the whole family in the ER Thanksgiving night, I'd better make a whole new one.  Eric ran to HEB & got the ingrediants Thanksgiving morning at 6 a.m.! I was able to make a new cheesecake & the family loved it! Success!!

Every Christmas growing up, I'd go to my 2nd Mom's house (aka my Momma's best friend) and she'd have homemade fudge waiting for me.  Although I'd eat a pound of it by the time we left, I remember always craving more a few days later.  It was yummo! This year, I've decided to make my own fudge to start the tradition in our own casa. 

The last Christmas baking on my list this year is Chocolate Chip Pumpkin Bread! I've never made this before but when I read the recipe, I knew I had to add it to my baking list.  I love pumpkin bread & adding chocolate chips to it, pure perfection!!


So, I ask you, what's your favorite things to bake for the holidays?! I'd love recipes of any yummo cakes, cookies, fudge, etc.!
