Green Eggs & Ham - St. Patty's Day Style! #TXBacon

March 17, 2012

What better way to celebrate St. Patrick's Day than having a Dr. Seuss inspired green eggs & ham breakfast?! And everyone knows my favorite bacon & ham is Petit Jean Ham (which btw is also the official meat of the Dallas Cowboys)! So when I got the idea to do green eggs and ham, I thought, "How can I make something yummy that my daughter will want to eat?!" Then it hit me... A Green omelet with ham, cheese, & black olives inside! Perfection!

So Saturday morning, we went to Walmart to get all the ingredients for breakfast. Bella wanted to help me pick everything out. She's become my little chef in the kitchen lately! We went strolling through the isles looking at all the cute St. Patty's Day decorations, then to the breakfast meats area. We were able to find Petit Jean Ham easily, scooped it up along with the other goodies, then headed to check out.

Once we got home, we got to cooking! Bella helped me put the cracked eggs in a bowl & I let her drip the green dye into the bowl as well. She loved how it changed the color and kept asking if it tasted the same with a different color! I just laughed and told her it was all going to be delicious!

Once we got done cooking, it was time to try our masterpiece and it was delish!! Bella loved everything about it! We decided afterwards that this was going to be our annual breakfast every St. Patrick's Day! Here's the recipe to celebrate with your little ones:

Green Eggs & Ham Omelet:
(Makes 1 omelet each)

Ingredients:

2 Eggs
3 drops of green dye
1 slice of Petit Jean Ham
2 tbsp milk
Shredded Cheese (I use cheddar)
Sliced black olives (optional)
Any other yummy veggies you like in your omelets!

Directions:

Break 2 eggs into a bowl
Add the drops of green dye. You can add as many or as little as you want depending on how dark green you want your eggs.
Add the milk and whisk until fully blended.
Pour into a hot pan & let cook until you start seeing bubbles form.
Add the ham & cheese and let cook until cheese melts.
Flip 1/2 the egg onto other side
Flip omelet once to cook both sides evenly
Put onto a dish & enjoy!
