Chicken & Green Chile Casserole

March 24, 2014

It's seriously been a while since I posted a new recipe. Mainly because I usually eat grilled chicken and veggies every night and how interesting is that to post?!
Last night I decided to give in and make my family a new not too healthy casserole that was delicious! So delish in fact we're heating up the rest tonight and having it again for dinner.
I got the original recipe here & changed it up a bit. (I added chicken cause no way was The Hubs gonna go for a vegetarian dinner!)
Chicken & Green Chile Casserole
2 - 7 oz. cans of whole green chiles
1 lb. Chicken breast
8 oz. bag  Monterrey Jack Cheese
8 oz. bag Cheddar Cheese
2 Eggs
1 - 5 oz. can Evaporated Milk
1 cup Flour
1/2 Cup Milk
8 oz can tomato sauce
1) Preheat oven to 350F degrees. Spray 9x13 baking pan.
2) Slice 1 can of chiles and place in an even layer on bottom of baking pan.
3) Sprinkle with 1/2 of the monterrey jack and cheddar cheese on top of the chiles.
4) In a separate bowl, mix together both milks, eggs, flour, cooked chicken, & the rest of the sliced chiles from 2nd can.
5) Pour over the chile/cheese in the next layer.

6) Pour a little cheese over the top and put in the oven for 25 minutes.
7) Remove from oven & pour tomato sauce on top and add the rest of both cheeses.
8) Cook for another 15 minutes.
Hope you love this recipe as much as we did!
It was definitely delicious!
